Grilled grapes & greens

Ingredients

  • 2 tbsp cider or white wine vinegar

  • 2 tsp honey

  • 2 tsp Dijon mustard, preferably grainy

  • 1/2 tsp dried tarragon

  • 1/4 tsp salt

  • 1/3 cup olive oil

  • 1 apple

  • 8 cups baby spinach, or mesclun greens

  • 1 medium-size bunch seedless green or red grapes

Instructions

  • In a small bowl, whisk vinegar with honey, Dijon, tarragon and salt. Gradually whisk in oil. Taste and add more tarragon or salt, if needed. Cut apple into quarters, then slice out and discard core. Thinly slice apple. Place in a large bowl. Add spinach.

  • Lightly oil grill and heat barbecue to medium-high. Place bunch of grapes on grill. Barbecue, uncovered, until grapes start to burst, 5 to 6 minutes. Gently turn over halfway through. When cool enough to handle, pick grapes from stems and add to spinach. Drizzle dressing overtop and toss. Delicious with our Barbecued "Onion Soup" Ribs.

Barbecued grapes? Why not? There always seems to be a bunch of them hanging around in the fridge, so throw them on the grill - stems and all! The heat makes them even sweeter while adding a little smokiness. They're a fantastic addition to any salad or as a side with your grilled favourites.
