2 large sweet bell peppers, preferably different colours
1 tbsp olive oil
1 tbsp balsamic vinegar
pinch paprika
pinch salt
pinch fresh-ground black pepper
Remove stems and cut peppers into quarters. Remove seeds and white ribs.
Stir oil with vinegar and seasonings. Brush pepper wedges with oil.
Place peppers on barbecue. Grill, brushing with oil mixture occasionally, until hot and singed around the edges, about 6 minutes per side.
