Easy grilled peppers

Ingredients

  • 2 large sweet bell peppers, preferably different colours

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • pinch paprika

  • pinch salt

  • pinch fresh-ground black pepper

Instructions

  • Remove stems and cut peppers into quarters. Remove seeds and white ribs.

  • Stir oil with vinegar and seasonings. Brush pepper wedges with oil.

  • Place peppers on barbecue. Grill, brushing with oil mixture occasionally, until hot and singed around the edges, about 6 minutes per side.
