2 tbsp soy sauce, preferably sodium-reduced
3 fresh garlic cloves, 1 tsp bottled chopped garlic
1 tsp freshly grated ginger, 1 tsp bottled puréed ginger
1/2 tsp sesame oil
1 284-g bag baby spinach, or about 7 cups
In a small bowl, stir soy sauce with garlic and ginger. Have spinach ready to add to pan. Place a wok or large wide saucepan over high heat. When pan is very hot, add oil. Immediately add spinach and soy mixture. Stir-fry just until wilted, about 1 minute. Immediately turn onto a plate, as it will continue to cook a little. Delicious with grilled chicken or fish.
