1 cup water
1 tbsp butter
1/2 tsp salt
1 cup dry couscous
540-mL can lentils
3 green onions, sliced
1/2 cup chopped fresh coriander, or 1/4 cup snipped fresh parsley
Bring water to a boil in a small saucepan. Add butter and salt. Stir in couscous. Cover and let sit 5 minutes. Then fluff with a fork. Meanwhile, rinse and drain lentils, thinly slice green onions and chop coriander. Stir into hot couscous. Serve with grilled chicken or salmon or enjoy on its own as a savoury snack.

Couscous is a tiny granular pasta that doesn't need cooking. We've paired it with lentils for protein punch and lots of coriander for Mediterranean flavour. It's terrific with a vegetarian burger or Greek salad.
