We've married pure maple syrup with fresh ginger and lime for a sophisticated taste with little effort.
1/4 cup maple syrup
2-in. piece fresh ginger
1 lime
1 tsp sesame oil, or 1 tbsp vegetable oil
4 1-in. salmon steaks
Preheat barbecue and oil grill. Pour maple syrup into a small bowl. Finely mince or grate 2 tablespoons (30 mL) ginger and add to maple syrup. Squeeze juice from half a lime, about 1 tablespoon (15 mL). Stir juice and oil into maple mixture.
Generously brush salmon with maple mixture. Place on hot grill. Barbecue, brushing often with maple mixture and turning once, until fish is cooked as you like, from 5 to 6 minutes a side. For extra zing, squeeze juice from remaining half of lime over top of hot steaks. Serve right away with a mixture of wild and white rices and long thin green beans.
