Lentils 'n' couscous

Ingredients

  • 1 cup water

  • 1 tbsp butter

  • 1/2 tsp salt

  • 1 cup dry couscous

  • 540-mL can lentils

  • 3 green onions, sliced

  • 1/2 cup chopped fresh coriander, or 1/4 cup finely chopped chives

Instructions

  • Bring water to boil in a small saucepan. Add butter and salt. Stir in couscous. Cover and let sit 5 minutes. Then fluff with a fork. Meanwhile, rinse and drain lentils, thinly slice green onions and chop coriander. Stir in lentils, green onions and coriander. Serve with grilled chicken.

Couscous does not need to be boiled, just soaked. Here we team it with lentils, but beans or chickpeas will do.
