Is this breakfast or dessert? In our humble opinion, it can be either! Make this open-faced sandwich alcohol-free by using rum flavouring, or omitting it completely.
2 tbsp butter
1/4 cup peanuts, chopped
2 tbsp brown sugar
1/4 tsp cinnamon
3 tbsp spiced or dark rum
2 ripe bananas, thinly sliced diagonally
4 slices egg bread
1/2 cup natural unsweetened peanut butter
Melt butter in a medium saucepan set over medium. Add peanuts, sugar and cinnamon. Stir until sugar melts, about 2 min. Remove from heat. Stir in rum and bananas until coated.
Toast bread. Spread each slice with 2 tbsp peanut butter. Top with bananas. Serve immediately.
