Thai red-curry tilapia recipe

Ingredients

  • 1/2 cup panko bread crumbs

  • 2 tbsp Thai red curry paste

  • 1 tbsp lime juice

  • 2 tilapia fillet

Instructions

  • Preheat oven to 400F. Lightly spray a baking sheet with oil. Spread 1/2 cup panko bread crumbs in a shallow dish. In another shallow dish, stir 2 tbsp Thai red-curry paste with 1 tbsp lime juice. Cut 2 tilapia fillets into quarters, forming 8 fish-stick-sized pieces.

  • Rub curry mixture over fillets, then coat with panko. Place fish on prepared baking sheet. Lightly spray fish with oil. Bake in top third of oven until a knife tip inserted into thickest part of fish and held for 10 sec comes out warm, 8 to 10 min.
