Hoisin steak stir-fry

Ingredients

  • 1/4 cup hoisin sauce

  • 1/4 cup ketchup

  • 2 tbsp soy sauce

  • 2 tbsp dry sherry or red wine or rice vinegar

  • 1 tsp garlic powder

  • 1 tsp ground ginger

  • 1/2 tsp hot-red-chili-flakes

  • 1 pinch salt

  • 250 g green beans

  • 250 g yellow beans

  • 250 g snow peas

  • 2 250 g strip loin steaks, about 1/2-in. thick

  • vegetable oil

  • 1/4 cup water

Instructions

  • In a small bowl, stir hoisin with ketchup, soy, sherry, garlic powder, ginger, chili flakes and salt. Trim ends from beans. Remove tips and string from snow peas, then slice in half. Slice steak into thin strips.

  • Coat a large frying pan with oil and set over medium-high heat. Add steak and stir-fry just until lightly browned, 2 to 3 minutes. Remove to a plate.

  • Pour water into pan. Using a wooden spoon, scrape up and stir in brown bits from pan bottom. Add beans. Cover and simmer 4 to 5 minutes. Add snow peas and return beef and any juices to pan. Stir in hoisin mixture. Stir often until snow peas are bright green, 1 to 2 minutes. Great with rice or wide egg noodles.
