Grilled minted new potatoes

Ingredients

  • 1 kg small new potatoes, about 18 potatoes

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp freshly ground black pepper

  • 6 12-in. wooden skewers

  • 1/4 cup chopped fresh mint

Instructions

  • Do not peel potatoes. Place in a large saucepan, then cover with water. Cover and bring to a boil over high heat. Then reduce heat to medium, partially cover and simmer until barely fork-tender, from 8 to 10 minutes. Drain well, then place in a large bowl. Pour in oil and sprinkle with salt and pepper. Stir until potatoes are well coated.

  • When cool enough to handle, thread 3 potatoes on each skewer. Grill right away or leave at room temperature 4 to 5 hours. When ready, oil grill. Preheat barbecue to medium-high. Grill, turning often, until potatoes are lightly charred and hot, from 8 to 10 minutes. Place on a platter. Sprinkle with mint. Great with grilled chicken or burgers.

Don't forget humble tubers--you'll love them lightly charred on the barbie, then sprinkled with fresh mint.

Tip

Prevent burning and splintering of skewers by soaking them in water for at least 20 minutes before threading potatoes.
