Festive puréed peas

Ingredients

  • 2 tbsp butter

  • 1 onion, chopped

  • 1 green bell pepper, finely chopped

  • 6 cups frozen green peas

  • 3/4 tsp salt

  • pinch black pepper

  • pinch freshly grated nutmeg

  • 2 tbsp sour cream, optional

Instructions

  • Heat butter in a wide saucepan set over medium-low heat. Add onion and green pepper and cook, stirring often, for about 10 minutes or until soft. Add peas and 1/2 cup (125 mL) water. Cover tightly and cook, stirring often, until peas are almost tender, about 8 minutes. Uncover, increase heat to medium and stir often until water is evaporated and peas are very soft. Stir in seasonings. Purée in a blender or food processor until fairly smooth. Taste and add sour cream, if using, and more salt, pepper and nutmeg if needed. Place in a serving dish and swirl top. Peas look festive when sprinkled with chopped red pepper and parsley.

Make ahead

Prepare, then place in a microwave-safe serving dish. Cover with plastic wrap and refrigerate for up to 1 day. Reheat on medium in the microwave, stirring every 2 or 3 minutes.
