Classic French Vinaigrette

Ingredients

  • 1/4 cup white wine vinegar

  • 1 garlic clove, minced

  • 1 tbsp Dijon mustard

  • 1 tsp dried tarragon

  • 1/2 tsp salt

  • 1/4 tsp granulated sugar

  • 1 cup extra-virgin olive oil

Instructions

  • In a bowl, whisk vinegar with garlic, Dijon, tarragon, salt and sugar. Slowly whisk in oil until evenly mixed. Or in a food processor or blender, whirl vinegar with garlic, Dijon, seasonings and sugar until mixed. With motor running, gradually add oil. Taste and add more sugar if needed. Store, covered, or pour into a jar and seal. Dressing will keep well, refrigerated, up to 1 week. Whisk or shake dressing before using.

Our fresh and tangy classic French vinaigrette marries well with the subtle flavour of lettuce. But don't stop at salads; splash this vinaigrette over roasted chicken or fish for a quick no-cook sauce. Invest in good quality extra-virgin olive oil; its superior flavour will shine through.

SWAP

honey, brown sugar or maple syrup for granulated sugar; herbed-seasoned white wine vinegar, rice wine vinegar, regular white vinegar or apple cider vinegar for white wine vinegar.

MIX AND MATCH

Stir in minced anchovies, sun-dried tomatoes, crumbled blue cheese, chopped pine nuts or minced jalapeños.
