A simple way to add greens to your holiday table.
2 tbsp olive oil
2 garlic cloves, thinly sliced
2 small bunches kale, about 12 cups packed, stems trimmed and chopped
1/2 tsp salt
Heat a large frying pan over medium-high. Add oil, then garlic. Cook for 1 min. Add kale and salt. Cook, stirring often, until kale is tender and wilted but still bright green, 3 to 4 min. Transfer to a platter.
Slice off and discard the tough rib from each leaf of kale, then chop the leaves.
