In this seafood dipping staple, butter is heated to remove the solids.—Soo Kim

Ingredients

  • 1 cup unsalted butter, cubed

Instructions

  • Melt butter in a saucepan over low, without stirring, until it foams and solids sink, 10 min. Remove from heat and let cool for 5 min. Skim off foam and discard. Pour into a ramekin, leaving solids in the saucepan. Serve warm.

Kitchen tip

Add 1 minced garlic clove for a little kick.
