A cookie-flavoured breakfast? Why not! Especially when it contains two full servings of vegetables.

Ingredients

  • 1/2 cup milk (dairy or plant-based)

  • 1 cup sliced banana

  • 1 cup frozen cauliflower

  • 1/3 cup vanilla or plain yogurt

  • 1 pitted Medjool date

  • 1 tsp vanilla

  • 1/4 tsp cinnamon

Instructions

  • Add the ingredients and a few ice cubes, if desired, to a blender.

  • Process until smooth. Start from low and then increase the speed if your machine has variable speed.

Kitchen tip

If your dates are dried out, steep them in warm water for 10 min.
