Who says you can't have a creamsicle for breakfast? Especially when it contains four servings of fruits and vegetables.

Ingredients

  • 1/2 cup 100 percent orange juice

  • 1/2 cup chopped carrots

  • 1/2 cup frozen cauliflower

  • 1/2 cup orange segments

  • 1/2 cup frozen sliced banana

  • 1/3 cup vanilla yogurt

  • 1/2 tsp orange zest (optional)

  • 1/4 tsp vanilla

Instructions

  • Add the ingredients and a few ice cubes, if desired, to a blender.

  • Process until smooth. Start from low and then increase the speed if your machine has variable speed.

Kitchen tip

To segment an orange, slice peel from top and bottom of orange. Cut off and discard remaining peel, including white pith, so flesh is showing. Cut out segments over a bowl.
