When sweet, juicy tomatoes are at their prime, follow this strict daily regimen: Buy, eat, repeat.
1/4 cup white balsamic vinegar
1 tbsp granulated sugar
1 tbsp olive oil
1 garlic clove, minced
180-g thin pizza crust
3 plum tomatoes, thinly sliced crosswise
250-g ball fresh mozzarella, thinly sliced
1/4 cup fresh basil leaves
PREHEAT barbecue to low. Boil vinegar with sugar in a saucepan until syrupy, 2 to 4 min.
STIR oil with garlic in a bowl. Brush over pizza crust. Overlap tomato and mozzarella slices alternately on pizza.
OIL grill. Barbecue pizza, lid closed, until cheese melts, 4 to 5 min. Drizzle with glaze. Sprinkle with basil.
