Grilled Caprese Pizza

Chatelaine Triple Tested

Fire up the BBQ. This grilled caprese pizza, with it’s fresh tomatoes and mozzarella and smoky flavour, is a quick shortcut to professional flavour.

Ingredients

  • 1/4 cup white balsamic vinegar

  • 1 tbsp granulated sugar

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • 180-g thin pizza crust

  • 3 plum tomatoes, thinly sliced crosswise

  • 250-g ball fresh mozzarella, thinly sliced

  • 1/4 cup fresh basil leaves

Instructions

  • PREHEAT barbecue to low. Boil vinegar with sugar in a saucepan until syrupy, 2 to 4 min.

  • STIR oil with garlic in a bowl. Brush over pizza crust. Overlap tomato and mozzarella slices alternately on pizza.

  • OIL grill. Barbecue pizza, lid closed, until cheese melts, 4 to 5 min. Drizzle with glaze. Sprinkle with basil.
