Not only are broccoli stems extremely nutritious, they're also delicious when prepared right.
Up to 40 per cent of Canada’s food supply ends up in landfills, a lot of which stems from household waste. One delicious and edible food item so many of us discard happens to be a favourite: broccoli stems! Not only are they extremely nutritious (gram for gram, they contain more vitamin C, calcium and iron than the florets), they're also delicious when prepared right. These Broccoli Stem Summer Rolls are the perfect example. — Carleigh Bodrug
12 edible rice paper sheets
2 broccoli stems, peeled and sliced into thin matchsticks
1 cup cooked vermicelli noodles (about 2 ounces dried)
1 carrot, peeled and sliced into thin matchsticks
1 red bell pepper, seeded and sliced into thin matchsticks
1 radish, sliced thinly
1/2 cup fresh mint, basil, or cilantro, chopped roughly
1 cup roughly chopped purple cabbage
1 ripe mango, peeled, pitted, and chopped roughly
3 tablespoons peanut butter
1 garlic clove
1 (1-inch) piece fresh ginger, minced
2 tablespoons soy sauce or gluten-free tamari
1 teaspoon pure maple syrup
Juice of 1 lime
1 to 3 tablespoons warm water, as needed to thin
2 tablespoons sesame seeds (optional)
2. Add a small portion of the broccoli stems, cooked noodles, carrot, bell pepper, radish, herb of
choice, and purple cabbage to the rice paper sheet. Gently fold over once, tuck in the edges,
then continue to roll until the seam is sealed.
3. Place, seam side down, on a serving platter. Repeat until all the fillings are used up.
4. Mango peanut sauce: In a blender, combine the mango, peanut butter, ginger, lime juice, soy sauce, maple syrup and water, and blend until smooth.
5. Serve rolls with mango peanut sauce and/or a sprinkle of sesame seeds, as desired.
