How to host a superfood dinner party

To the Brit culinary wizards at Leatherhead Food Research, who say they’ve created one of the healthiest menus for an airline service, we say bravo! The in-flight meal, which is packed with energy-boosting superfoods and essential nutrients, was developed when Dr. Paul Berryman challenged his employees to create a meal that met all 222 of the European Food Safety Authority's healthy requirements.

To the Brit culinary wizards at Leatherhead Food Research, who say they’ve created one of the healthiest menus for an airline service, we say bravo! The in-flight meal, which is packed with energy-boosting superfoods and essential nutrients, was developed when Dr. Paul Berryman challenged his employees to create a meal that met all 222 of the European Food Safety Authority's healthy requirements.
 
Inspired by Dr. Berryman's challenge we put together our own menu, perfect for your next (healthy) dinner party!

Appetizers
They're serving: Fresh- and smoked-salmon terrine (for brain and heart function)
We're serving: Smoked salmon and apple timbales

They're serving: Mixed-leaf side salad with extra-virgin olive oil dressing (to help lower cholesterol)
We're serving: Green goddess salad with a great vinaigrette dressing!

Main Course
They're serving:
Chicken casserole with lentils and vegetables (to improve vitamin and mineral intake and iron absorption)
We're serving: A quick and easy chicken curry recipe 
 
They're serving: High-fibre multi-grain bread roll (to bump up fibre and folate levels)
We're serving: Gluten-free multi-grain bread

Dessert
They're serving: Live-yogurt blancmange topped with walnuts and sugar-free caramel-flavoured sauce (for good gut health and blood sugar control)
We're serving: Yogurt fruit swirls   
 
Drinks*
They're serving: Cranberry, raspberry and elderflower sports drink (for energy, vitamins and electrolytes)
We're serving: Our apple sparkler (brandy optional) and spring water to stay hydrated

*We’re sure sneaking in a glass of red wine won’t hurt either!
