This week, get all the shopping out of the way, and cook along with us every night as we use flavourful, easy dinner recipes to make a meal in 45 minutes or less. And leftovers — what leftovers? Here’s a simple set of recipes to help you use up any odds and ends when the week is over:
Nutty gomae salad Whirl 1 cup mayo with 1/2 cup roasted cashews, 1/4 cup each toasted sesame seeds and rice vinegar, 1 tbsp each grated ginger and soy and 1 tsp miso paste in a food processor until smooth. Drizzle over shredded lettuce, grated carrots and sliced avocado.
Dark chocolate mousse Microwave 1 cup dark chocolate chips until almost melted, 1 to 2 min. Stir until smooth. Let cool. Whisk 2 cups 35% cream in a large bowl until soft peaks form. Whisk in melted chocolate, then 1/2 cup ricotta until combined. Scoop into serving dishes.
