Bobbette & Belle's pecan linzer cookies
Often seen at luncheons, showers and holidays, Linzer cookies are the type of delicate cookie you covertly wrap in a napkin and tuck into your purse to enjoy more of later. They are aptly named after the city of Linz in Austria, where they originated as an adaptation of the classic Linzertorte. The cookie always has a nut base, the most popular being almond or hazelnut, but we prefer to use pecans. Toasted pecans enhance the buttery flavour of the cookie and provide a nice contrast to the sweet-tart jam.
