Soy-Orange Salmon

Ingredients

  • vegetable oil

  • 4 skinless salmon fillets, about 180 g each

  • 1 tbsp orange juice

  • 1 tbsp soy sauce

  • 1 tsp honey

Instructions

  • Preheat oven to 475F (250C). Spray or oil a baking dish just large enough to hold salmon fillets or line with foil. Place fish skin-side down in dish. In a small bowl, stir orange-juice concentrate with soy sauce and honey. Spoon half over fish and evenly spread.

  • Roast in centre of oven for 7 min. Spoon remaining soy mixture over fillets. Continue roasting until a knife tip inserted in centre of fish comes out warm, 7 to 8 more min. Great with rice and steamed baby bok choy.
