1/2 454-g pkg soba noodles
2 tbsp freshly squeezed lemon juice
1 tbsp olive oil
1/2 tsp sesame oil
1/4 tsp salt
1 red bell pepper, julienned
1 carrot, julienned
15 snow peas, julienned
Cook soba noodles. Rinse with cold water and drain well. Whisk lemon juice with olive oil, sesame oil and salt. Toss with noodles and stir in sweet red pepper, carrot and 15 snow peas, all cut into julienned strips. Sprinkle with toasted sesame seeds and snipped chives.
