Go for thick fish fillets - they're best on the barbie. Supermarkets carry marinated catfish fillets that are relatively inexpensive. Throw them on the grill while you make the salsa.

Instructions

  • Oil grill and heat barbecue to medium-high. If you do not have store-bought marinated fish, lightly oil fillets. Then evenly sprinkle with Cajun seasoning. Place on grill. Barbecue until a knife tip inserted into centre of fish and held for 5 seconds comes out warm, about 4 to 5 min per side. During the last minute of barbecuing, warm tortillas on grill.

  • Meanwhile, for salsa, slice mango from pit in large pieces. Chop mango and tomato. Finely chop onion. Place all in a bowl. Squeeze in about 2 tbsp (30 mL) lime juice and sprinkle with salt. Stir until mixed. Tuck fish into tortillas and top with salsa, lettuce and sour cream.
