Go for thick fish fillets - they're best on the barbie. Supermarkets carry marinated catfish fillets that are relatively inexpensive. Throw them on the grill while you make the salsa.
Oil grill and heat barbecue to medium-high. If you do not have store-bought marinated fish, lightly oil fillets. Then evenly sprinkle with Cajun seasoning. Place on grill. Barbecue until a knife tip inserted into centre of fish and held for 5 seconds comes out warm, about 4 to 5 min per side. During the last minute of barbecuing, warm tortillas on grill.
Meanwhile, for salsa, slice mango from pit in large pieces. Chop mango and tomato. Finely chop onion. Place all in a bowl. Squeeze in about 2 tbsp (30 mL) lime juice and sprinkle with salt. Stir until mixed. Tuck fish into tortillas and top with salsa, lettuce and sour cream.
