2 potatoes
1 large tomato
1 tbsp vegetable oil
1/2 tsp dark sesame oil
1/2 tsp ground ginger
1 tsp salt
1 tbsp plum sauce
1 tbsp soy sauce
2 tsp hot chili-garlic sauce
2 green onions
500 g ground chicken
Oil grill and heat barbecue to medium. Slice potatoes 1/3 inch (0.8 cm) thick. Cut tomato in half. In a small bowl, stir vegetable oil with sesame oil, ginger and 1/2 tsp (2 mL) salt. Brush over potatoes and tomato.
In a large bowl, stir plum sauce with soy, chili-garlic sauce, 1/2 tsp (2 mL) salt and onions. Crumble in chicken. Using a fork or your hands, gently mix. Shape into 4 burgers, about 1/2 inch (1 cm) thick. Using your thumb, make a shallow depression in centre of each.
Place burgers, potatoes and tomato on grill. Barbecue, covered, until burgers are firm when pressed, 5 to 6 minutes per side. Turn potatoes often. Grill until tender, 8 to 10 minutes. Tomato only needs 1 to 2 minutes per side.
