Green beans in garlic oil

Ingredients

  • 1 kg green beans, about 8 cups

  • 3 tbsp fruity olive oil

  • 4 garlic cloves, minced

  • finely grated orange zest, from 1 orange

  • 1/2 tsp salt

Instructions

  • To make ahead, trim beans. Add all beans to a pot of boiling water. Partially cover and boil just until bright green, about 3 minutes. Drain and rinse with cold water. Refrigerate in a resealable plastic bag for up to 2 days. To serve, heat oil, garlic and peel in a wide frying pan set over low heat. Stir often for 8 minutes. Increase heat to medium-high. Add beans and salt. Stir constantly until warm, from 1 to 2 minutes.
