Saucy turkey scaloppini

Ingredients

  • 375 g turkey scaloppini, about 2 to 3 pieces

  • 1 tsp lemon-pepper seasoning

  • 1 tbsp butter

  • 1 bell pepper

  • 1/2 cup white wine or sherry

  • 1 tsp Dijon mustard

Instructions

  • Cut scaloppini pieces in half if necessary to easily fit in pan. (You may have to cook in two batches.) Sprinkle both sides of turkey with lemon pepper and pinches of salt. Melt butter in a large frying pan, preferably non-stick, set over medium heat. Then add turkey and sauté until golden, 3 to 4 min per side. Remove each piece as soon as it is cooked. Cover with foil to keep warm. Meanwhile, thinly slice pepper.

  • After removing turkey to plates, add wine and Dijon to pan. Using a wooden spoon, scrape up brown bits from pan bottom and blend mustard into wine. Then add peppers. Stir often until sauce is reduced by half and peppers are tender-crisp, from 3 to 4 min. Spoon over turkey.
