Citrus, chicken and spinach toss

Ingredients

  • 1 tbsp white-wine vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 1 garlic clove, minced

  • 1 tsp cumin

  • 1 pinch salt

  • 2 tbsp olive oil

  • 2 orange

  • 1 small zucchini

  • 6 cups baby spinach

  • 3 cups bite-sized pieces of cooked chicken

Instructions

  • For dressing, in a bowl, stir vinegar with Dijon, honey, garlic, cumin and salt. Slowly whisk in oil.

  • Slice a small piece off top and bottom of oranges. Cut off and discard remaining peel including white pith. Thinly slice into rounds. Cut rounds in half, if you like. Thinly slice zucchini into rounds.

  • Combine all ingredients in a large bowl with spinach and chicken. Just before serving, drizzle with dressing and toss until evenly coated. Lovely with whole-grain bread or toasted olive focaccia.
