Racy ribs

Ingredients

  • 1 to 1.5 kg pork back ribs

  • 1/4 cup ketchup

  • 1/4 cup soy sauce

  • 1/4 cup maple syrup, honey or brown sugar

  • 1 1/2 cups water

  • 1/2 tsp hot-red-chili-flakes, optional

Instructions

  • Cut ribs into serving-size sections, about 2 to 3 ribs. Combine ketchup, soy, maple syrup and water in a large saucepan. For a fiery taste, sprinkle in red pepper flakes

  • Add ribs and turn to coat with mixture. Bring to a boil over high heat. Then reduce heat to low, cover and simmer until fork tender, about 50 minutes.

  • Remove ribs. Increase heat to high and boil liquid, uncovered, until thickened like a barbecue sauce, from 20 to 25 minutes. Watch carefully to avoid burning.

  • Preheat broiler or barbecue to medium. Brushing with sauce several times, broil ribs on a rack about 4 inches (10 cm) under broiler or barbecue until hot and richly glazed, from 6 to 8 minutes per side.
