Lemony packet-baked salmon

  • Preheat oven to 350F. Cut 1 lemon in half lengthwise, then cut each half into thin slices. Lay a long piece of aluminum foil on a baking sheet and place 4 115-g fillets of salmon in the middle of the foil, about 1 1/2 in. apart. Sprinkle 1/2 tsp pepper and 1/8 tsp salt over fillets. Lay lemon slices overtop. Close and crimp the foil very loosely over the salmon, creating a packet. Bake until a knife tip inserted into thickest part of fish and held for 10 sec comes out warm, about 15 min. Remove from oven. Let rest 2 to 5 min.
