We put a frothy spin on classic lemonade
1 Meyer lemon, ends cut off, cut into wedges, seeds removed
2 cups water
3 tbsp granulated sugar
COMBINE lemon, water and granulated sugar in a blender. Whirl on high for 1 min. Pour lemonade through a sieve into 2 glasses. Top with ice and serve immediately.
Calories 79, Protein 22g, Fibre 2g, Sodium 8mg.
Good source of vitamin C.
Kitchen tip: Meyer lemons are sweeter and have less bitter rinds than standard lemons. To use standard lemons: Zest 1 lemon, cut ends off and slice the remaining peel away (discarding the rind). Continue with recipe, adding lemon zest before blending.
