Add a hint of cinnamon and nutmeg to kick this classic breakfast fare up a notch.
3 eggs
1/2 cup milk
4 tsp granulated sugar
1 1/2 tsp vanilla
Pinch of salt
4 1-in. slices of egg bread
2 tbsp unsalted butter, divided
maple syrup, (optional)
icing sugar, (optional)
roasted plums, (see link below)
WHISK eggs, milk, sugar, vanilla and salt in an 8-in. square dish. Heat a large frying pan over medium.
PLACE 2 slices of bread in egg mixture and soak 15 to 20 seconds per side.
MELT 1 tbsp butter in the frying pan. Fry bread slices until golden brown, 2 to 3 min per side, adjusting heat to ensure even browning. Wipe pan, then repeat with remaining bread, egg mixture and butter.
SERVE with maple syrup, icing sugar and roasted plums.

Kitchen Tip: For a nice extra touch, add 1/4 tsp cinnamon and a pinch of ground nutmeg to the egg mixture.
