Classic French toast with roasted plums

Chatelaine Triple Tested

Add a hint of cinnamon and nutmeg to kick this classic breakfast fare up a notch.

Ingredients

  • 3 eggs

  • 1/2 cup milk

  • 4 tsp granulated sugar

  • 1 1/2 tsp vanilla

  • Pinch of salt

  • 4 1-in. slices of egg bread

  • 2 tbsp unsalted butter, divided

  • maple syrup, (optional)

  • icing sugar, (optional)

  • roasted plums, (see link below)

Instructions

  • WHISK eggs, milk, sugar, vanilla and salt in an 8-in. square dish. Heat a large frying pan over medium.

  • PLACE 2 slices of bread in egg mixture and soak 15 to 20 seconds per side.

  • MELT 1 tbsp butter in the frying pan. Fry bread slices until golden brown, 2 to 3 min per side, adjusting heat to ensure even browning. Wipe pan, then repeat with remaining bread, egg mixture and butter.

  • SERVE with maple syrup, icing sugar and roasted plums

Kitchen Tip: For a nice extra touch, add 1/4 tsp cinnamon and a pinch of ground nutmeg to the egg mixture.

Kitchen Tip: Keep French toast warm on a baking sheet in 200F oven while you cook remaining slices.
