These festive cheese balls can be prepared in advance and served on a cracker.
140 g fresh goat cheese
125 g cream cheese
Freshly ground black pepper
⅓ cup cranberries, chopped
⅓ cup pecans, chopped
½ cup fresh parsley, chopped
Zest of 1 lemon
15 small round crackers, for serving
In a bowl, mix the cheeses and season generously with pepper.
Using your palms, form 15 balls, each containing about one tbsp of the cheese mixture. Set aside in a cool place while you prepare the garnish.
To prepare the garnish: finely chop the cranberries, pecans, and parsley. Place them in a bowl, add the lemon zest and mix well.
Roll each ball in the garnish, one at a time, pressing lightly to coat the bite. Keep the balls in the refrigerator until ready to serve.
When ready to serve, place each ball on a small cracker.
