Fancy Fried Eggs

Core peppers and slice into thick rings. Pan-fry until golden on both sides, then crack an egg into the centre of each ring. Season with salt and pepper. Cover and cook until eggs are done.

Veggie Hash

Pan-fry 1/2 cup each diced onion and diced peppers in 2 tsp oil. Add 2 chopped tomatoes, 1 minced garlic clove and 1 sprig thyme. Cook until saucy. Season with salt and pepper. Top with a fried egg.
