Mandarins, canned

Here's what we suggest you do with leftover canned mandarins

Citrus spinach salad 
Whisk 3 tbsp mandarin syrup with 3 tbsp olive oil, 1 tbsp balsamic vinegar and 1/8 tsp salt. Drizzle over baby spinach and mandarin segments.

Zesty stir-fry
Sauté sliced chicken. Add a handful of snow peas. Season with salt, honey and minced ginger. Stir in some drained mandarin segments just before serving. Serve over rice.
