Pickled jalapenos

Here’s what we suggest you do with leftover pickled jalapenos.

Punchy Potato Salad

Stir 1/3 cup mayonnaise with 1 minced shallot, 3 tbsp minced pickled jalapenos and 1/4 tsp each coriander and salt in a bowl. Add 5 cups cooked halved baby potatoes, 2 chopped avocados and 1 thinly sliced green onion. Toss to coat.

Modern Tuna Melt

Stir 1 can drained flaked tuna with 1/4 cup mayonnaise and 1 tbsp minced pickled jalapenos. Spread mixture on toasted rye bread and top each slice with 1/4 cup shredded old cheddar. Broil until cheese melts.
