Healthy hot cereal Bring 1 cup apple juice to a boil. Remove from heat, then add 1/2 cup couscous. Let stand, covered, until liquid is absorbed, 5 min. Stir in chopped dried apricots and toasted almonds.
Fast fritters Combine 2 cups cooked couscous with 1 minced shallot, 1/2 cup each grated carrot and zucchini, 2 eggs, 1 tbsp flour and 1/4 tsp salt. Shape into patties. Pan-fry in oil until golden, about 2 min per side.
