Our assistant food editor, Irene Ngo, demonstrates how to ice a layer cake in three simple steps. First, with an offset (or regular) spatula, ice the centre layer, then use a thin layer of frosting for a crumb coat (to seal in cake crumbs), and finally, add a layer of frosting to cover the cake and bring it to a decorative finish.
