Saucy mixed-berry cobbler

Ingredients

  • 4 pints fresh strawberries, or 3 500-g containers

  • 1 pint fresh blueberries, about 1 cup

  • 2 tbsp orange liqueur, or 2 tbsp frozen orange juice concentrate

  • 1/2 cup cornstarch

  • 2 tbsp granulated sugar

  • 6 squares white chocolate, about 168 g

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1 large orange

  • 3/4 cup unsalted butter, at room temperature

  • 1/3 cup granulated sugar

  • 2 eggs

Instructions

  • Preheat oven to 350F (180C). Hull strawberries, then thickly slice. Place in a 9x13-inch (3-L) baking dish. Add blueberries. Drizzle with liqueur or dot with orange juice concentrate. In a small bowl, stir cornstarch with 2 tbsp (30 mL) sugar. Sprinkle over fruit. Stir until cornstarch dissolves and is evenly mixed.

  • Coarsely chop chocolate. Place one-quarter in a small microwave-safe bowl and set aside. In a medium-size bowl, stir flour with baking powder, salt, cinnamon and nutmeg. Finely grate peel from orange. Add to flour mixture. In another medium-size bowl, using an electric mixer on medium, beat butter with 1/3 cup (75 mL) sugar until creamy, 2 minutes. Occasionally scrape down side of bowl. Beat in eggs, one at a time. Using a wooden spoon, gradually stir in flour mixture until mixed. Stir in larger portion of chocolate until evenly distributed. Spoon dollops of batter over berries. Fruit won't be completely covered. Don't smooth top. Bake in centre of preheated 350F (180C) oven until top is golden and berries are bubbly, about 45 minutes.

  • Remove from oven. Place on a wire rack. Microwave reserved chocolate on medium, stirring halfway through, until almost melted, about 2 minutes. Stir until smooth. Drizzle over cobbler. Serve warm or at room temperature. Great with whipped cream.
