Rustic mediterranean cold pasta salad

Ingredients

  • 1 pint red cherry tomatoes

  • 1 pint yellow cherry or grape tomatoes

  • 41643 red onion

  • 1/2 cup kalamata or green olives, pitted

  • 1/4 cup red-wine vinegar

  • 1/4 cup olive oil

  • 1/2 cup crumbled feta

  • 1/3 cup chopped fresh dill

  • 1 tsp salt

  • 1 tsp dried oregano leaves

  • 1/2 tsp garlic powder

  • 2-Jan pepper

  • 1/2 500-g pkg fusilli pasta

  • 1/4 cup raisins

  • 1/4 cup toasted pine nuts, optional

Instructions

  • Combine tomatoes, onions and olives in a large bowl. Drizzle with vinegar and oil. Stir in feta, dill and seasonings. Let stand at room temperature.

  • Cook pasta in a large pot of boiling water, according to package directions, about 10 min. Add raisins for last minute of cooking. Drain, then rinse with running water until totally chilled.

  • Stir pasta and raisins into tomato mixture. Sprinkle with pine nuts.
