Ingredients

  • 1 to 2 tsp bottled Cajun seasoning

  • 1/2 tsp salt

  • 4 salmon fillets, each 180 to 250 g

  • 1 tbsp Dijon mustard

  • 1/2 lime

Instructions

  • Preheat oven to 450F (230C). In a small bowl, stir Cajun seasoning with salt. Line a rimmed baking sheet with foil, if you wish. Place salmon, skin side down, on foil. Using the back of a spoon, spread Dijon overtop fish. Sprinkle with seasoning mixture.

  • Roast in centre of preheated oven until a knife tip inserted in centre of fish comes out warm, 15 to 18 minutes. Squeeze juice from lime overtop. Great with rice pilaf, extra lime wedges and steamed asparagus.

Bottles of mixed spices are a time-pressed cook's best friend. The work of mixing and blending is already done -- all that's left is measuring! We love the Cajun mix on fish with added zing from Dijon and a squeeze of lime.
