1/2 cup orange juice
2 tbsp honey
2 tbsp soy sauce
2 salmon fillets, each about 180 g
2 green onions
Preheat oven to 500F (250C). In a 9-inch (23-cm) pie plate, using a fork, stir orange juice with honey and soy sauce until honey is dissolved. Add salmon and turn a few times until evenly coated. Turn salmon skin-side up. Roast in pie plate in centre of preheated oven 6 minutes. Turn salmon and baste with pan juices.
Continue roasting until a knife tip inserted in centre of fish comes out warm, about 4 to 6 more minutes. Meanwhile, thinly slice green onions. Using a large wide spatula, place fish on warm plates, leaving skin on pan. Spoon pan juices overtop salmon and sprinkle with onions.

A touch of honey and soy sauce with orange juice makes an easy glaze for pan-seared salmon. Serve it with plenty of rice or noodles to soak up all the delicious sauce. Add steamed bok choy or broccoli and you've got a fast healthy dinner in less than 15 minutes.
If you prefer your fish with a thick glaze, pour pan juices into a small frying pan. Bring to a boil and stir often until liquid is reduced by half, forming a thick glaze. This will take at least 2 minutes of boiling. Drizzle over fish. If you're a fan of hot and spicy sauces, consider stirring a dollop of hot chili-garlic or Tabasco sauce into pan juices or glaze.
