Open-faced spicy California roll

The humble sandwich goes haute. Build a better sandwich with a few fresh ingredients and some creative upgrades.
227-g pkg imitation crabmeat, separated into large chunks
2 tbsp mayonnaise
1/2 tsp sriracha hot sauce
1/8 tsp dark sesame oil
2-Jan avocado, finely diced
1/4 cup finely diced cucumber
1/4 cup finely chopped pickled ginger
4 plain, unsalted rice cakes, or corn cakes
1/2 sheet nori, cut into matchsticks
1 tsp toasted sesame seeds, optional
Stir crab with mayo, hot sauce and sesame oil in a medium bowl. In another medium bowl, stir avocado with cucumber and pickled ginger.
Assemble by placing crab in an even layer on rice cakes. Top with avocado mixture, then nori and sesame seeds. Serve immediately.
