Maple-apple pudding

Ingredients

  • 4 to 5 large ripe apples

  • 1/2 cup maple syrup

  • 2 eggs, beaten

  • 2 tbsp melted butter

  • 1 tbsp freshly squeezed lemon juice

  • 1/4 cup milk

  • 1/2 cup all-purpose flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup raisins

Instructions

  • Preheat oven to 375F (190C). Peel, core and slice apples into 1/2-inch (1-cm) pieces. Place in a greased, 8-inch (2-L), square glass baking dish. Pour 1/4 cup (50 mL) maple syrup over apples. In a small bowl, using a wooden spoon or electric hand mixer, beat eggs with butter, lemon juice, 1/4 cup (50 mL) maple syrup and milk. In another bowl, stir flour with baking powder and salt. Stir flour mixture into egg mixture until smooth, about 2 minutes. Fold in raisins. Spoon batter evenly over apples. Bake in centre of 375F (190C) oven until apples are cooked through, from 30 to 35 minutes. Great served warm with whipped cream.
