350-g pkg tortellini pasta, meat or cheese-filled
1 red and yellow bell pepper
225-g pkg sliced button mushrooms
1 tbsp Indian curry paste
1 1/4 cups alfredo sauce
chopped cilantro, optional
Cook pasta following package directions. Meanwhile, slice peppers into thin strips. Lightly coat a large frying pan with oil and set over medium heat. Add mushrooms. Cook, stirring occasionally, until light brown around edges, 2 to 3 min.
Add peppers and stir in curry paste. Stir often until peppers are tender-crisp, about 2 min. Add alfredo sauce and stir until warm, 2 min. Drain pasta well. Stir into sauce. Sprinkle with cilantro.
