Asian frittata

Ingredients

  • vegetable oil

  • 6 eggs

  • 2 tbsp water

  • 1 tsp bottled chopped garlic

  • 1 tsp minced ginger

  • 1/2 tsp dark sesame oil

  • 1 small red bell pepper, chopped

  • 1 green onion, thinly sliced

  • 1 cup chopped cooked chicken, or pork

Instructions

  • Preheat oven to 325F (160C). Lightly coat a 9-inch (23-cm) pie plate with oil. In a large bowl, whisk eggs with water, garlic, ginger and sesame oil. Stir in pepper, onion and chicken. Pour into pie plate. Stir to evenly distribute vegetables and chicken. Bake in centre of preheated oven until top is golden and egg mixture is set when jiggled, 30 to 35 minutes. Great with a dollop of hot chili-garlic sauce.
