Smoked cheddar lends big flavour to this basic grits recipe.
1 cup corn grits, or medium ground polenta
3/4 tsp salt
1 cup grated smoked cheddar
1/2 cup chopped cilantro
Combine grits with 2 cups water and salt in a large saucepan and set over medium. Cook, whisking often, until grits start to thicken, 5 to 6 min. Add 2 more cups of water. Whisk often until mixture starts to thicken again, about 8 min. Stir in 1 more cup of water and continue whisking until grits are tender and slightly thickened, 8 to 10 more min.
Stir in grated cheddar and half of cilantro. Scoop into bowls and garnish with remaining cilantro. Serve with our Spicy Lemon Shrimp and drizzle with pan juices.

Shopping tip Corn grits and polenta are both ground corn, but polenta has a finer grind.
