Peppery green beans

Ingredients

  • 500 g green beans

  • 1 sweet red bell pepper

  • 1 large garlic clove, minced

  • 1 tsp sesame oil

  • 1 tsp vegetable oil

  • 1/2 cup water

  • 1 tsp lemon juice

  • 1/4 to 1/2 tsp cracked or coarsely ground black pepper

  • generous pinch salt

  • 1 tbsp toasted sesame seed, or sliced almonds (optional)

Instructions

  • Remove stem ends from green beans, but leave whole. Seed and thinly slice red pepper. Sauté garlic in sesame and vegetable oils in a large frying pan set over medium heat until fragrant, about 2 minutes. Add red pepper. Sauté, stirring often, for 2 minutes.

  • Add green beans and water. Increase heat to medium-high and boil, uncovered and stirring often, until beans are tender-crisp, from 6 to 7 minutes. Drizzle with lemon juice and sprinkle with 1/4 teaspoon (1 mL) black pepper and a pinch of salt. Toss until mixed. Taste and add more pepper for a truly fiery taste. For a nutty flavour, sprinkle with toasted sesame seeds or sliced almonds.
