This scrumptious mash recipe serves as a healthy side dish to a robust main course. Meet your veggie quota with this spiced blend of root vegetables.

Ingredients

  • 907-g pkg carrots, peeled and cut into 1-in. chunks

  • 1 large rutabaga, peeled and cut into 1-in. chunks

  • 1/4 cup 35% cream

  • 1/4 cup finely chopped parsley

  • 1/2 tsp kosher salt

  • 1/8 tsp nutmeg

Instructions

  • COVER carrots and rutabaga with water in a large pot set over medium-high. Boil until tender, about 30 min. Drain and return vegetables to pot. Add cream and parsley. Sprinkle with salt and nutmeg. Season with fresh pepper. Mash until smooth.
