Roasting is the simplest way to make mediocre tomatoes great and good ones spectacular.

Ingredients

  • tomatoes

  • olive oil

  • salt

  • pepper

Instructions

  • SLICE tomatoes in half (or quarter big round ones), drizzle with olive oil, sprinkle with salt and season with fresh pepper. Roast them in a single layer on a parchment-lined baking sheet at 400F for 20 to 25 min.

Roasting is the simplest way to make mediocre tomatoes great and good ones spectacular! Time in the oven intensifies their salty sweet richness and turns any tomato into the perfect topper for pasta, crostini, pizza, sandwiches and salad.
